Some of my favorites that haven't been mentioned

- Konosuba (isekai comedy)
- Eminence in Shadow (isekai blend. overpowered MC that is fairly unique. a serious world with a silly MC. great animation)
- One Punch Man (overpowered MC, lots of weird/interesting characters. great animation)
- Hajime no Ippo (long running boxing manga with a few good seasons of anime. from bullied kid to boxing champ)

You seem to be into action heavy shonen-ish shows.
Of the relatively recent ones I'd say:

Bungo Stray Dogs
Vinland Saga
Bleach Thousand-Year Blood War arc (it does requiere you to have seen at least until the end of the Aizen arc, you can skip the rest though)
Attack On Titan
Heavenly Delusion (not quite as action heavy, but still great)
Cyberpunk EdgeRunners
Vivy: Fluorite Eye's Song
86 (first few episodes are a bit slow, but it gets good)
Megalo Box and its sequel Nomad (first season is more action heavy, second season is more of a drama)
Trigun Stampede if you can get into 3D anime

Frieren is great too but it's not quite as action heavy and has a lot of slice of life stuff too, so it will depend on how much you like that sort of stuff
Pluto was also fantastic but it's more of a Sci Fi drama mixed with a detective thriller than an action show.

But you can stop watching after the bad guys escape to Hueco Mundo. (It’s mostly down hill after that)
I think that the few rare hype moments in the espada saga are still make worth watching the whole thing, and the last season of the anime has been straight fire.

I think that the few rare hype moments in the espada saga are still make worth watching the whole thing, and the last season of the anime has been straight fire.
The thing that turned me off on it is that they did so much world building up until that point which they end up just throwing away after that point that it was just too glaring for me. (As opposed to Attack on Titan where none of the new reveals as it went on really contradicted the early parts.)

Yeah i get it.

But when the first part was so fucking good, and the music and voice acting continue to be good etc, you stick with the thing even when it start to stink, at least that was my experience, even at his worst, i was still enjoying the whole thing because you end up loving the characters, the music, the power ups etc so you just want to see more of it even if the quality is not the same as it was before.

All of these appear to be battle Shonen, and based on the two highlighted, I'd recommend Yu Yu Hakusho. It's older, but it's written by the same person that did Hunter x Hunter, and JJK owes a lot of its influence to that author.

Gurren Lagann after all these years is still probably my favorite. I really enjoyed the story and the animation is top notch. That ending has me crying every time.
